Chocolate Covered Strawberry Cupcakes



  I have been trying to be more creative with my creations.

Anyone who is already well into this business knows it is difficult to be a pioneer & create something entirely new from scratch.


The reason being that whatever combination you come up with , has probably already been thought up or done.


I am not saying it is impossible, just challenging.

With that said, you begin to make modifications and test them out...


....... and re-test them out on repeat until they are taste-worthy and something you can call your own.

Well I am still trying to rack my brain for that great invention, but in the meantime.....


I was at a wedding recently and had one of life's greatest pleasures---chocolate covered strawberries.

Has anyone else ever had the problem of the strawberry becoming mushy and the chocolate melts wierd and it is not as enjoyable as you thought it was going to be in your mind ?

I began thinking , there must be a way for you to enjoy  the same flavor combo and not have to worry about the natural decomposition of a strawberry.....


Eureka !



Make it a cupcake.

I found a wonderful recipe while trolling through Pinterest, it is from a woman named Jamie from  My Baking Addiction .

Her blog is fantastic & her photography skills trump mine ( just like every other person in the blogging world besides me. haha )

Still got to work on that.


Anyways.......

The cupcakes recipe is so MOIST. Which I can attribute to the sour cream & pudding mix.

My eyes were opened !

 I don't, however, mess with fresh fruit as decorations , unless I am immediately serving the dessert.

So, what  are the chances that I found strawberry shaped marshmallows the same day ?

Fate.


I just dipped them in chocolate for effect :)

Double chocolate stout cupcakes w/ Bailey's Cream Cheese Frosting


Happy St. Patrick's Day !


Uhhh...err... belated....6 months....whatever.


I made these for a St Patrick's Day Potluck with some of my friends.

Besides being down-right DELICIOUS & an adult-friendly dessert

They are also , I believe the contemporary word is "skinny"

So then you won't feel so bad about drinking & making bad decisions...

because the cupcake you ate was low-fat & low-calorie.

I would call that a win-WIN

Isn't that right girls ?...





Anyways...


I found the recipe through Skinny Taste.


This recipe is very simple and not very sweet, which I felt was necessary to bring out the flavor of the booze.

One modification I made was using the Hershey's Special Dark cocoa powder to get a deeper chocolate color.

The darker the better for MY cupcakes, but you can choose what you like ;)
